◇ About Alice Waters
Alice Waters is the owner of Chez Panisse, known as the hardest restaurant to get a reservation at in America. A chef, thinker, and founder of the Edible Schoolyard project, she opened her restaurant in Berkeley, California in 1971. Since then, she has pioneered key food concepts that are now mainstream, including local production for local consumption, organic farming, food safety, and farmers’ markets. These ideas sparked a slow food revolution that spread across the globe.
One of her lifelong missions, the Edible Schoolyard, involves students growing crops, cooking together, and eating together in the schoolyard, learning the connection of life through food. This initiative nurtures children’s development as human beings and has expanded as Edible Education, reaching Japan and beyond.
